Slice zucchini into 1/4 - 1/2 inch thick medallions layout a single layer on a piece of paper towel or prefered towel. Allow to sit for 10-15 mins. This helps suck out some of the water within the zucchini. This will help with not getting squishy pizzas.

Preferred pizza or tomato sauce
Preferred shredded cheese
Preheat oven to 375 degrees & grease a cookie sheet.
Arrange zucchini medallions in a single layer on cookie sheet.
Place a small amount sauce on each zucchini medallion.
Top with desired cheese.
Bake until zucchini is warm and cheese is melted.
